20 Aug NOT YO MAMA’S PANCAKES: PROTEIN PACKED FLAP JACKS
Rainy mornings in Miami waking up call for some chill time and (of course) PANCAKES!
These aren’t your typical pancakes, as they have more than your regular does of protein and tummy-filling fiber packed in. The combination of the gluten-free grains, hearty banana, gelatinous chia seeds and blended “nopal”, along with a dose of Vega Protein Powder and egg for binding the dry ingredients (vegan option is available below as well), will amplify your typical breakfast to the next level of fitness.
Of course, get creative with the ingredients you have on hand, and especially with the toppings. Don’t have the chia seed blend? Use just regular chia seeds. Not sure where to find the nopal and oatmeal mix? You’re not alone, this was a special import from Mexico! Feel free to use a dash more of chia and regular ground oats instead.
PREP TIME: 3 minutes (or less!)
SERVES: solo uno (1)

INGREDIENTS
- 1 banana
- 1 egg (or Vegan substitute)
- 1/2 scoop Vega Protein
- 1/3 cup Love Grown Super Oats (chia & quinoa)
- 1/4 cup blended oatmeal and nopal (cactus) – this is from Mexico! Use regular oats if you don’t have something similar
- coconut oil/spray for pan
DIRECTIONS
- Heat pan with coconut oil
- In a small bowl, whisk all ingredients
- Place on pan, cooking each side 2-3 minutes, or until edges start to brown
- Flip! Cook on other side
- Plate to serve, adding toppings of choice (we went with blueberries, sliced almonds and a drizzle of honey)
