This simple, protein-packed breakfast or lunch easy to make meal is a go to for me after a workout or to fuel up for a busy day. The superfood boost of Maca Powder adds an extra kick of energy boost.
I’ve been getting a lot of requests from you lately for simple and easy healthy recipes to make: this one is one of my staples! While there’s nothing new about avocado toast, I’ve recently gotten back into eating eggs again.
Because of this, I’ve experienced greater energy levels and my body overall felt better. While some may shake their finger and say, “you’re not vegan anymore!?” I want to remind you warriors: true health isn’t about a title or eating habit. It’s about how you feel from the inside out. This, for me, is the #lifestylenotadiet I so often preach, inspire and teach. Here I am, walking my talk.

Let’s get into the recipe and ingredients! I’ve kept it pretty basic and full of greens in this dish. Kale and spinach help to alkalinize the body’s pH levels. The sprouted grains and egg add protein and satiate hunger. My favorite healthy fat — avocado — helps to rebuild cells and give your body energy.
Yes, our bodies NEED fats in order to survive, and prevents our bodies from storing extra fats because it thinks we’re in a famine. It’s incredible to me today that for years of my life I avoided anything with fat in it in a wrongful attempt to lose fat from my body. Live and learn, warriors — eat your healthy fats for better health!

15 MINUTE EGG AVOCADO TOAST
PREP TIME: 15 minutes
INGREDIENTS: 6-9 (*optional items)
INGREDIENTS
- 2 Pieces Sprouted Bread (Ezekiel is my favorite)
- 2 Cage-free Organic Large Eggs
- handful spinach
- 1 slice of onion
- 1/3 avocado (or 2 tbsp guacamole)
- 1/2 C sliced mushrooms*
- 2 C raw kale
- 1 tsp Organic Raw Maca Powder*
- salt + pepper*
DIRECTIONS
- Toast bread
- Heat non-stick pan with 1/2 C water in it
- Add onions, mushrooms and kale to pan and cover
- Smear avocado or guacamole on toast
- Once ingredients in pan are cooked, remove from burner and stir in gently maca powder
- Add cooked ingredients to top avo toast
- Cook eggs (typically, I have one full egg with yolk and only egg whites of the other)
- Plate, and eat joyfully immediately
